Pico de Gallo

You only need six ingredients to make this signature tortilla chip topper.


1 ¾ cups — Maverick tomatoes
¼ cup — white onion
1 — jalapeño
¼ cup — cilantro
1 tbsp — fresh lime juice
To taste salt


Wash, cut in half and core the Sunterra Greenhouse Maverick tomatoes. Dice the tomatoes about ¼ inch thick. Peel the onions, then dice about ¼ inch thick as well. Slice the jalapeño in half, deseed and finely chop. Save the seeds and add to the pico if you prefer a little more spice. Finely chop the cilantro.

Add the tomatoes, onions, jalapeños and cilantro to a bowl and toss with the lime juice and salt. Let the pico sit for 20 minutes to optimize flavour. Toss again, add more salt if needed and serve with your favorite tortilla chips.
