Asparagus and Strawberry Salad

Asparagus and strawberries and feta, oh my! Sweet and savoury come together perfectly in this summertime salad.


15 — asparagus spears
1¼ tbsp — lemon juice
4 tbsp — apple juice
2 tbsp — apple cider vinegar
2 tbsp — olive oil
¼ tsp - garlic, finely chopped

3 cups — Dutchess strawberries, trimmed and quartered
1 tbsp — basil chiffonade
¼ cup — yellow onions, sliced
2 tbsp — feta
1 tbsp — almond slivers
Salt and cracked black pepper to taste


Snap off the asparagus stems and boil, roast or grill. While the asparagus cooks, whisk together lemon juice, apple juice, vinegar, oil, garlic, salt and pepper in a small bowl until blended. Set the vinaigrette aside.

Once the asparagus is cooled, cut into 1-inch pieces. In a large bowl, combine asparagus, Dutchess strawberries, basil, onions and vinaigrette. Season with salt and pepper and let sit 30 minutes. Top with crumbled cheese and almonds just before serving.
