Charred Tomato Salsa

This vibrant salsa complements our on-the-vine tomatoes with peppers, lime, cilantro, and a smoky-sweet char.
Ingredients
1¼ lbs — on-the-vine tomatoes
4 — garlic cloves, peeled
1 — red bell pepper
1 — yellow onion
2 — jalapeño peppers
2 tbsp — fresh lime juice
½ cup — cilantro, roughly chopped
1½ tbsp — olive oil
White sugar and sea salt to taste
Instructions
Preheat oven to high broil.
Line a large baking sheet with parchment paper. Slice the tomatoes, red bell pepper and onion into wedges about ¾-inch thick. Cut the jalapeño peppers in half, removing the core and seeds (retain some seeds if you want your salsa spicier).
Place the sliced tomatoes, peppers, onions and garlic cloves on the baking sheet. Drizzle with olive oil and broil in the oven for about 10 minutes. Stir, then return to the oven for another 5 minutes, or until vegetables are evenly charred.
Allow the roasted ingredients to cool slightly, then transfer to a food processor or blender with blade attachment. Add fresh lime juice and blend until mixture is smooth with only some light texture remaining.
Transfer mixture to a bowl. Stir in cilantro, salt and sugar, adjusting to taste. Serve with tortilla chips.
