Caprese Tomato and Mozzarella Stack

Our tomatoes are layered with mozzarella, basil and pesto for a fresh caprese twist.
Ingredients
2 — on-the-vine tomatoes
120g — fresh mozzarella
Balsamic glaze to taste
4 tbsp — basil pesto
8 — fresh basil leaves
Sea salt and freshly cracked pepper to taste
Instructions
Slice the tomatoes and mozzarella into ¼ inch-thick slices.
On a plate or rimmed serving platter, drizzle balsamic glaze, then top with two mozzarella slices (placed apart). Add a dollop of pesto on each, then layer on a tomato slice, a basil leaf, and another mozzarella slice. Repeat until you've used all of the tomato, mozzarella, and basil, adding pesto on top of each slice of mozzarella.
Season with sea salt and freshly cracked pepper, drizzle with more balsamic glaze, if desired, and serve.
